This might be a dumb observation, but you are connecting to the internet so ofc its collected. LEDGER LIVE is online, makes sense to me.

Your IP address is technically needed by Ledger Live (or any other front-end for that matter, like MetaMask) to communicate with the internet, in particular to connect with the back-end servers to send your transactions and to get your balances, or also to get access to the ledger apps or firmware updates.
