Trezor supports a few dozen coins and a few thousand tokens. Unfortunately, the answer is different for each and every coin and each and every token.
In a broad sense, you need a wallet that:
1. Is able to pair with Trezor
2. Has old versions that can be installed or downloaded
3. Has as little „backend servers“ as possible.
I think Metamask only allows #1. Something like MyCrypto (not my favorite) may allow all three. If it was just Bitcoin or just ETH it would be easy(-ish). But if you are buried in DeFi or exotic NFTs it gets MUCH more difficult.
If you give up, call a wallet recovery service that does the „run old software“ bit for a living and can likely do this in minutes. They usually charge 20% of all funds recovered though.
