If you want Ledger Live to display only one set of accounts, you could create an additional user on your Macbook. ie – Go to System Preferences & add another user. The second user would log in, open Ledger Live and see an empty version. They’d need to hook up the Ledger device, add accounts and set it up.
The first/default user would have to go into Ledger Live and delete accounts that dont belong. Just need to do this once.
You now have 2 users, sharing 1 computer, but segregated accounts in Ledger Live.
Ledger Live, out of convenience displays all of the coins/wallets/addresses that it was synchronized with…. only when trying to move balances will it actually ask for the device & signature… so your partner cannot send out your balances/vice versa. If you had been using one device, either person could transact any balance.
Two Nano X = different seeds etc…. so they are truly independent. Think of Ledger Live as the equivalent of being able to look up someone’s search history on a shared computer…. that’s what it is doing, pulling up public record of balance every time you log in.
Hope this helps…. needless to say your seed words not needed / dont type them into any computer.
