Assuming you’re referring the recent *Recover* controversy, that’s an opt-in service that hasn’t yet been released. When it is released, you’ll be able to choose whether or not you want to use it. If you choose not to, your Ledger experience will be unchanged.
Any firmware update is done through Ledger Live, and does not require you to enter seeds. If something is asking you to enter seeds, you are using the wrong software and it’s probably a scam. Having said that, you should always make sure that you have your own backup of your seed phrase any time you do anything with the firmware, just so you’re covered in the very unlikely event that something goes wrong. Instructions are here, depending on your device:

Nano S Plus: [https://support.ledger.com/hc/en-us/articles/4445777839901-Update-Ledger-Nano-S-Plus-firmware?docs=true](https://support.ledger.com/hc/en-us/articles/4445777839901-Update-Ledger-Nano-S-Plus-firmware?docs=true)
Nano X: [https://support.ledger.com/hc/en-us/articles/360013349800-Update-Ledger-Nano-X-firmware?docs=true](https://support.ledger.com/hc/en-us/articles/360013349800-Update-Ledger-Nano-X-firmware?docs=true)
The process is simple if you follow the instructions.
A passphrase is a good idea, but not absolutely necessary. In any case, if you haven’t set one up for yourself, you won’t have to enter one: https://support.ledger.com/hc/en-us/articles/115005214529-How-to-set-up-a-passphrase-?docs=true
As for staking, that depends on what coin and what platform, so hard to give any insight there without more details.
